I’m a full-fat, full-flavor girl. When I eat a salad, I’m not skimping on the good stuff even if to me the good stuff happens to be grilled peaches and toasted pine nuts. I’ve started to move away from the heavily dressed salads teaming with bad calories, and find myself experimenting with bringing out the natural flavor of each dish, adding little enhancements here and there. Organic Girl asked me to recipe test some of their new Butter Lettuce, so I went for the obvious: Salad. BUT not just any salad. This is the South in your mouth summer salad of your dreams! As if your dream guy walked into your life, chances are, he’d be carrying this grilled peach salad. Easy to make, easier to eat. Great to share, but why would you? He’s yours- er I mean the salad is yours.
This butter lettuce from Organic Girl is so delicate, it would be a shame to drown it in dressing. I’ve left this salad true to its essence and only enhanced it slightly with some lemon and the faintest drizzle of balsamic glaze. The grilled peaches bring out the tender taste of the lettuce and the lemon agave chicken has enough flavor, the dish would be lost if covered in anything more.
